Pickled Cucumber Salad

This refreshing quick salad is tasty and only takes moments to prep.  The hard part is waiting for it to be ready!  It’s a spicy spin on a salad my mother used to make with cucumbers, onions and distilled vinegar.  Yasda Bento, one of my favorite workday lunch spots serves the Japanese variant of this dish, called sunomono.

My first vegan chili

On Friday, a co-worker gave me a gigantic bag of chilies.  Nearly a pound of delicious fire-roasted Hatch green chilies.  He makes the trip to the big festival in New Mexico every year to buy a 50 pound bag.  He went again this year, and he needed to make room in his freezer for a new batch, so I was one of the lucky recipients of the  leftovers from last year.  What do I do?  I start with chili, because I love spicy food.  I have other plans for the rest, such as green chile salsa and green chile burgers, but that’s another post.

If you’re tuning in for the first time…

This blog is intended to be a chronicle of my own lessons as I work on recipes and attempt some cooking techniques for the first time.  If you want variety in your diet, you have to create it yourself.  You can’t rely on the food industry to make it how you like it.  In recent years, media coverage seems to indicate that some manufacturers have their priorities out of order as well.

I enjoy reading food blogs and cookbooks, so you can expect some reviews, as well as spotlights on food products, beverages & kitchen tools.  Maybe even a few restaurants.

So follow me for some simple recipes as well as some more involved kitchen projects.

Trust me.  Cooking doesn’t have to be difficult.  We’ll make it through this together.
